Summer Recipes: Fresh Peach Bellinis

Happy Friday Everyone! Time for a fresh and light summer cocktail to finish off the work week with style. I love recipes with peaches in the summer - this fruit is in season, extra affordable, and so delicious. Make these fresh peach bellinis for friends this weekend and enjoy an evening away from the office.

This recipe is from Ina Garten on the Food Network and makes 6-8 servings.

Fresh Peach Bellinis - Ina Garten 


2 fresh, ripe peaches
1 tablespoon fresh lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine


Use a food processor or blender to mix the main ingredients. Take the pit out of each peach and place the fruit, lemon juice and sugar in the machine. Mix together and blend until smooth. Next pour the mixture through a sieve to remove the peach solids. Finally, grab a fancy glass and put 2 tablespoons of the peach mixture in the bottom of the glass and fill the rest with chilled prosecco. Cheers!
