Summer Recipes: Fresh Peach Bellinis

Happy Friday Everyone! Time for a fresh and light summer cocktail to finish off the work week with style. I love recipes with peaches in the summer - this fruit is in season, extra affordable, and so delicious. Make these fresh peach bellinis for friends this weekend and enjoy an evening away from the office.

This recipe is from Ina Garten on the Food Network and makes 6-8 servings.

Fresh Peach Bellinis - Ina Garten 


2 fresh, ripe peaches
1 tablespoon fresh lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine


Use a food processor or blender to mix the main ingredients. Take the pit out of each peach and place the fruit, lemon juice and sugar in the machine. Mix together and blend until smooth. Next pour the mixture through a sieve to remove the peach solids. Finally, grab a fancy glass and put 2 tablespoons of the peach mixture in the bottom of the glass and fill the rest with chilled prosecco. Cheers!

Tips and Trends: Workout Wednesday

A good sweat session is one of the best ways to reduce stress, take a break from work, and clear your mind after a hectic day. Some of my favorite workouts are ones you can do right at home in your own living room. Here are some of the best home workouts that are short and effective to get you in shape with only a small amount of time.

1. Poolside Pilates 

Pilates is an amazing way to tone and shape the body and focus on core strength and endurance. Try this workout at home to strengthen the abs, glutes, legs and arms.

2. Bikini Yoga Flow 

Nothing says relaxation quite like a Yoga flow workout. This one is filmed on the beach and ohhh so relaxing. Tone up while relaxing and distressing from your day.

3. Weight Loss Cardio Sculpt 

Jessica Smith has a great Youtube Channel with full length workout videos to do after work. Burn calories and have fun in less than 30 minutes!

4. Barre Fitness Workout - Booty, Abs, Arms 

Engage the total body with this ballet inspired workout. Tone up gracefully with this workout you can do anywhere with just a chair.

5. HOT Body HIIT Workout 

Blast calories with this total body workout. In just 12 minutes you can get the heart rate up and really tone and shape all the major muscle groups.

Summer Recipe: Cherry-Pistachio Tea Cakes

People in London definitely love their tea, and these portable tea cakes are the perfect pairing with a steaming cup of earl grey. Cherries are especially delicious in the summer and perfect in this recipe.

This recipe is from The Food Network and makes 12 servings.

Cherry-Pistachio Tea Cakes


1/2 Cup Pistachios
1/3 Cup White Flour
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
2/3 Cup Confectioners Sugar
2 Large Eggs
6 Tablespoons Unsalted Butter
12-24 Fresh Cherries


Preheat oven to 350 degrees and line muffin tin with paper liners. Put pistachios, flour, baking powder and salt in food processor and pulse until ingredients are finely ground. In a second bowl mix together sugar and eggs, then add pistachio mixture. Melt the butter and stir it into the batter until smooth and combined. Spoon batter evenly into muffin cups and bake around 8 minutes or until batter begins to set. Place 1 or 2 cherries in center of cup and continue baking until edges are browned about 10-12 minutes. Remove and allow to cool for about 10 minutes. Dust with powdered sugar, serve and enjoy with a hot cup of tea!

Summer Recipe: Fresh Bruschetta Recipe

This bruschetta recipe is easy, fresh and delicious...perfect for a summer barbecue. It's always good to have easy summer appetizer recipe on hand. Ree Drummond from The Food Network makes an incredible bruschetta that is full of flavor and color with both red and yellow tomatoes.

This recipe is from Ree Drummond and makes 12 servings.

Bruschetta Recipe - The Pioneer Woman


4 Tablespoons Olive Oil
5 Cloves Garlic, Minced
1 Pint Red Grape Tomatos, Halved
1 Pint Yellow Grape Tomatos, Halved
1 Tablespoon Balsamic Vinegar
16 Whole Fresh Basil Leaves
Salt and Pepper
1 Whole Baguette
1 Stick Butter


In a skillet, brown the garlic for about a minute. Next mix the garlic and oil in a small bowl. Add the red and yellow tomatoes,  balsamic, basil, and salt and pepper to taste. Cover and refrigerate for an hour or two. Cut the baguette diagonally and grill the bread evenly on both sides. Spread melted butter on the baguette pieces generously. Next spoon the tomato mixture on the bread slices. Serve on a big platter and enjoy!

What to Wear to Work: Back to Basics

So my latest deal has gotten pretty busy and I have been running around quite a bit. This classic little black dress and matching jacket is the closest I can get to wearing sweatpants to the office because it's SUPER comfortable. Also, this is a GREAT outfit for changing into flats once it hits 5:30pm and I know that I'll just be curled up in my office for the rest of the night, because the dress and jacket combo still looks quite chic even without heels. Turning up the sleeves to show the striped cuffs adds a touch more color and takes the edge off the rather severe jacket. Adding the pearls keeps the whole thing from looking too boring. For this outfit I usually opt for my long string of pearls so I can loop it several times - a single strand of pearls looks a bit too basic. I'm trying to keep up some semblance of fashion while pulling 15+ hours in a day!!

Summer Recipe: Rice, Bean and Corn Fiesta Salad

Summer is a great time to eat fresh, clean food and make recipes that are simple and easy. This recipe is a vegan rice and bean salad that can be eaten on its own or in a wrap, on a salad or with corn tortilla chips. The fresh cucumbers and tomatoes add crunch and flavor that tastes like summer.

This recipe is from SummerGirl Fitness and makes about 6 servings.

Rice, Bean and Corn Fiesta Salad


1 Can Black Bean
1 Cup Brown Rice
1 Can Corn
1 Cucumber
4 Large Tomatoes
1 Bunch Small Green Onions
2 Tablespoons Red Wine Vinegar
2 Tablespoons Olive Oil (Optional)
Salt and Pepper


Cook the brown rice in a rice cooker, mixing 1 cup rice to 2 cups of water. Once the rice is done, set it aside to cool. Slice the green onions into small pieces, and dice the cucumber and tomatos. In a large bowl mix together the corn, black beans, cucumbers, tomatoes and onions. Slice a handful of cilantro and toss into the bowl. Next add the brown rice and stir it all together. Add 2 tablespoons of red wine vinegar, an optional 2 tablespoons of olive oil, and salt and pepper to taste. Add additional olive oil or vinegar to your liking. Serve and enjoy!

5 Tips for Traveling this Summer - The Healthy Way

The best part of summer is definitely summer travels. Traveling is a great way to take a break from the busy work grind and relax. One of the big challenges of vacation time, though, is keeping up with your workouts and maintaining healthy eating habits. Stay healthy while on vacation with just a little planning ahead. Here are 5 tips for healthy traveling, and some pictures from some of my favorite travel destinations.

1. Bring a Resistance Band

Resistance bands are the perfect way to bring the gym with you no matter where you go. I picked one up at target for about $10 and they take up no room at all in a suitcase. With a resistance band you can work every major muscle group with only a small amount of space.

2. Pack Healthy Snacks

Site seeing can make you very hungry, so make sure to pack healthy snacks every day for when those cravings hit. Packing bags of almonds, apple slices, and low fat cheese sticks helped resist buying a croissant after every museum tour. Also, having protein packed snacks will keep your energy levels high while you are on the go.

3. Track your Walking each Day

Walking on vacation is a great way to burn calories, and all those steps definitely add up. When you are traveling, consider buying a Fitbit to track your steps and see how many calories you can burn a day just by walking around museums and to and from historic sites. Try walking instead of taking the subway or bus and watch your steps add up with every hour.

4. Drink Plenty of Water

Make sure when you are traveling to drink plenty of water. With all the excitement you can easily forget to drink water, and bottled water abroad can cost a lot. Bring a water bottle with you to fill up whenever you get a chance, and be sure to drink around 3 liters a day to stay hydrated while out in the sun.

5. Incorporate Active Activities

There are lots of ways to incorporate active activities into you travels that can help you stay fit while on the road. Hiking and taking walking tours of the city are amazing ways to workout while seeing some incredible natural landscapes. Keep an eye out for active activities to add to your travel itinerary and burn extra calories while enjoying your visit.

I fell in love with the panelling on this jacket the minute I tried it on and knew I had to take it home! It's incredibly versatile and the perfect shade of grey to for a British summer. Might not be the first color you think of for summer, but it's cold up here - it only got up to 75 degrees this week, and I only stopped wearing my winter coat to work at the beginning of June! The rest of the oufit is a mix of softer, floral-inspired pieces that still look appropriate in a city where brown is a "light, summery" color.

Summer Recipe: 4th Of July Red, White and Blue Trifle

The perfect, easy no-bake recipe for your 4th of July picnic! I love festive recipes that make entertaining fun and delicious. Add this Pinterest worthy recipe to your menu this Saturday.

This recipe is from and makes one large trifle.

Red, White and Blueberry Trifle - 


10 oz Angel Food Cake Cut into Cubes
2 Pints Sliced Strawberries
2 Pints Blueberries
6 Tbsp Sweet Condensed Milk
1 1/2 Cups Cold Water
1 4oz Package White Chocolate Pudding Mix
12 Oz Frozen Whipped Topping


Whisk the water and condensed milk into a bowl, add the pudding mix and allow mixture to stand for 2-4 minutes. Then fold in the whipped topping to make the filling. Next assemble to trifle. In a large bowl put a layer of cake in the bottom, spread a layer of filling and pour in some blueberries, layer more filling and add some strawberries. Then put another layer of cake, filling, and strawberries and then more filling and then blueberries. Finish off the top with extra whipped cream and berries. Serve and enjoy - Happy 4th of July!
