Summer Recipes: Linguine with Shrimp Scampi

Nothing says summer quite like lemon, fresh herbs, and shrimp. This recipe from the Barefoot Contessa has lots of flavor, and a light summery taste. Perfect for a summer weekend get together or an afternoon lunch in the garden.

Linguine with Shrimp Scampi


Linguine with Shrimp Scampi - Barefoot Contessa

Ingredients: 

Vegetable Oil
Kosher Salt
Linguine Pasta
2 1/2 Tablespoons Olive Oil
1 1/2 Tablespoons Minced Garlic
3 Tablespoons Unsalted Butter
1 Pound Large Shrimp
1/4 Teaspoon Black Pepper
1/3 Cup Chopped Parsley
1/2 Lemon, Zest
Juice of 2 Lemons
1/8 Teaspoon Red Pepper Flakes
Lemon Slices for Garnish

Directions: 

Cook linguine pasta in large pot of water with a drizzle of vegetable oil and pinch of salt for 7-10 minutes or until al dente. In large skillet pan melt butter and sauté the garlic for 1 minute. Add the shrimp, 1 1/2 teaspoons of salt, pepper and sauté until pink for about 5 minutes. Remove from heat and add parsley, lemon zest, lemon juice, lemon slices and red pepper flakes. Put the linguine pasta into the skillet pan and toss the pasta in the sauce. Serve and enjoy!
