Sophisticated Summer: BBQ Recipes That Make Delicious Leftover Work Lunches

Summer means time to break out the grill and enjoy all the amazing BBQ recipes we wait breathlessly for all year long. Grilling on the weekend makes delicious party-ready meals, but recipes that can transform from your weekend get together - to easy leftover lunches are even better. Anything to make the working woman's life a little easier. Below are 3 of my favorite BBQ recipes that you can make on the weekend, and then transform into lunches for your work week.

This recipe is designed specifically for the busy working woman. Simple to make, and easy to cook, this BBQ chicken will take only minutes once you are home. Make a large amount of chicken, then save the leftovers and make a delicious BBQ chicken sandwich for lunch during the week. I love using ciabatta bread, and adding my favorite cheese along with lettuce and tomato for the perfect sandwich.

Not all grilling recipes have to include meat. These grilled vegetables are full of flavor, and so colorful and delicious. Make a big batch of grilled veggies on the weekend including, zucchini, squash, red bell peppers, egg plant, mushrooms and asparagus. Enjoy them for you Sunday BBQ, but then pack them to take for lunch at the office. Take a whole wheat wrap, toss in a nice assortment of the various vegetables, roll up the wrap, and you have a delicious whole wheat vegetable wrap for lunch.

3. Beef and Vegetable Shish Kabobs -

Shish Kabobs are fun to make, especially in the summer, and I love that you can customize the recipe and add your favorite vegetables and meat to the dish. Make a large number of kabobs, following the recipe above, or using whatever you have in your kitchen. During the week, grab a tupperware and use a fork to push all the meat and vegetables off the skewer into the container. Take this delicious meat and vegetable medley to work for lunch.
