Spring Recipes: Good Friday Mustard-Roasted Fish

It is customary on Good Friday not to eat meat, so instead take the opportunity to try a new fish recipe for dinner tonight. This mustard-roasted fish by the Barefoot Contessa uses two types of mustard to create an incredible sauce that gives flavor to even the simplest fish. I love making this recipe with red snapper but you could use any white fish you have.

This recipe is from Food Network Star: The Barefoot Contessa, Ina Garten and serves 4.

Mustard-Roasted Fish Recipe

Barefoot Contessa - Mustard Roasted Fish

Ingredients:

4 (8 ounce) Fish Fillets
Salt and Pepper
8 Ounces Creme Fraiche or Heavy Cream
3 Tablespoons Dijon Mustard
1 Tablespoon Whole Grain Mustard
2 Tablespoons Minced Shallots
2 Tablespoons Drained Capers

Directions:

Preheat the oven to 425 degrees. Place fish fillets in baking dish and sprinkle with salt and pepper. Next, combine the creme fraiche, both types of mustard, shallots, capers, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Spoon the mixture onto the fish fillets and spread evenly over all 4. Bake fish for 10-15 minutes until it's barely done. Serve hot and enjoy!
