Spring Recipes: Passover Macaroons

It may seem hard to believe, but Easter and Passover are just around the corner. On Fridays from now until Easter I will be posting a weekly passover approved recipe that you can try this year. Passover foods cannot use yeast, and must be kosher. For the busy working woman, getting a head start on planning Easter or Passover is a must! Be prepared and ready for the perfect feast with these delicious recipe ideas.

This week's recipe is from my favorite food blogger and food network star, Ina Garten, for delicious coconut macaroons. These cookies are simple to make and taste amazing. The recipe below makes around 20 cookies.

Coconut Macaroons

Coconut Macaroons - Barefoot Contessa

Ingredients:

14 Ounces Sweetened Shredded Coconut
12 Ounces Sweetened Condensed Milk
1 Teaspoon Pure Vanilla Extract
2 Large Egg Whites, Room Temperature
1/4 Teaspoon Kosher Salt

Directions:

Preheat oven to 325 degrees. Combine vanilla, milk and coconut in large bowl. In a second bowl, whip together the egg whites and salt until the mixture makes firm peaks. Next fold the egg whites into the coconut mixture. Use an ice cream scoop to spoon out small balls of the mixture and drop them on a parchment lined cookie sheet. Cook for 25-30 minutes or until golden brown. Allow to cool, then serve and enjoy!

Give this recipe a try and I promise you will not be disappointed! These cookies are so soft and amazing, perfect for an Easter or Passover feast.

March Madness: How to Dress for Unpredictable Weather

March weather can be the most unpredictable of the year. Temperatures move up and down constantly, and wind and rain make dressing for work a definite challenge. Here are my tips for making it through unpredictable March, while staying chic and fashionable.

1. Layers are Your Friend

Kate Spade Somerset Cardigan

Layering is one of the best ways to stay prepared for any type of weather. Invest in cardigan sweaters that you can wear with lightweight wool trousers, and layer over a blouse for the office. Keep sweaters in a variety of fabrics. Cashmere, light wool, or cotton are great options to choose between based on the weather. Top your outfit with either a wool or waterproof trench coat depending on the forecast.

2. Carry a Mini Umbrella

ShedRain WindPro Umbrella

March can be a very wet month, so make sure to have an umbrella packed in your office tote at all times. You never know when the weather will take a turn, so find a small, compact umbrella that you can have with you every day.

3. Accessorize with a Variety of Hats, Scarves & Gloves

Halogen Crinkled Cashmere Wrap
Keep hats, scarves and gloves by the door to grab depending on the weather. I keep both a light wool scarf and a warm wool scarf out to choose between based on how cold it is. Check the forecast on your weather app before running out the door so you can make the right selection.

4. Short Boots and Rain Boots

Hunter Original 'Tour Gloss' Rainboot

Boots are still the go-to shoe for March especially with cold, wet and rainy weather. Consider investing in a pair of rain boots to wear on your trek into the office, and switch into pumps once you get there. Keep your feet dry and warm in a classic black pair that you will be grateful for as you walk through puddles of melting snow. On a chilly, but dry day, opt for a pair of short, heeled boots that are comfortable but not as warm as your winter ones.

5. March Makeup Touch-Ups

Naked On The Run - Urban Decay (Sephora)

Whether you walk to work through wind, rain or snow, or brave the elements as you run from the car to your office, make sure to keep makeup with you for touch ups. I always keep my Naked On the Run palette that has eye shadow, eye liner, mascara, blush, bronzer, lip gloss and highlighter all in one compact. Touch up your makeup and look flawless no matter what the weather has in store.

6. Weather-Proof Hairstyles

If your hair is anything like mine, wet, windy weather is not its friend. March weather means time to break out some go-to weather proof hairstyles just in case. Find a few styles that you can master and have ready to go if your loose curls get ruined with a rainy day. Some of my favorites are the french twist, fishtail braid, or ballerina bun. Keep extra bobby pins and hair ties in your bag in case you need to throw your hair up after a wet walk to work.

Tips and Trends: 8 Easy Tips for Waking Up Refreshed

Early mornings can be a challenge for the busy working woman. Especially if you have a stressful week, make sure your mornings run smoothly so you can ease into the day. The goal is to wake up feeling alert and ready to take on the day. Here are 8 simple and easy tips for making your mornings brighter and more refreshing.

1. Relax 30 Minutes Before Going to Sleep

Before going to bed, take the last 30 minutes to do something relaxing. Read a book or a magazine or listen to some calming music. Taking time to calm the body down before you go to sleep can help you sleep deeper. Make sure to also get at least 6-8 hours of sleep a night.

2. Place Your Alarm Clock Across Your Room

Often one of the most stressful parts of the morning is waking up late after realizing you hit the snooze button one too many times. Allow yourself enough time to get ready in the morning. Set your alarm for the time you need to get out of bed, then place it across the room to force you up and out of bed at the right time. This will ensure you can go through your morning routine without feeling rushed.

3. Drink Water

After you wake up, drink a glass of cold water, with some cucumber and mint or lemon in it. This will help rehydrate you after a night of sleeping and start hydrating you for the day ahead. The cold water will also help wake you up and get ready for the day.

4. Make Your Bed

After you get up, make your bed so you won't be tempted to crawl back under the covers. Making your bed is also a great mental signal to your brain that it is time to wake up and get going. You will also feel more relaxed knowing the room is organized and clean before you leave.

5. Get Some Exercise

Exercising in the morning is a great way to wake up and get the blood flowing. If you are able to squeeze in a workout in the morning, this is a great way to feeling refreshed throughout the day. Even if all you can do is 20 minutes - it will still get the body moving and stretched out. Try SummerGirl Fitness' Total Body 20 Workout for a quick total body workout you can do in the morning!

6. Stick to Your Morning Grooming Routine

Reduce stress in the morning by sticking to your tried and true morning routine. Put on the clothes you laid out the night before, use your go-to office makeup, and pick a proven and simple hairstyle. Busy mornings are not the time to experiment with new looks, makeup or hairstyles. Plan these out the weekend before, so that your mornings can be simple and problem free.

7. Listen to Your Favorite Music

Music is an incredible mood booster and stress relieved. Create a morning playlist full of upbeat songs that will help get you going in the A.M. Switch it up week to week and play your favorite tunes every morning while you get ready, or as you walk to work.

8. Eat a Healthy Breakfast

Make sure to eat a healthy breakfast to boost your energy level and help you wake up. They say breakfast is the most important meal of the day, and this is very true for a number of reasons. Eating something first thing in the morning will help jump start your metabolism, and motivate and wake you up for your day.
